When my husband first made this, I was in love! In fact, my neighbor came over and I offered some of this with some chips for her... and she was smitten too! She ate half the container!
I was putting it away and spilled some on the floor by accident- oh no! I was so disappointed that I had my husband make me some more!
So easy that I could even make it!
2 cans black beans (drained and washed)
2 cans white and yellow whole kernel corn (drained and washed)
1 cup of diced tomato
1 large red or sweet onion
1 bunch green onions- chopped
1 Jalapeño pepper, seeded (optional)
lots of cilantro
1 lemon squeezed
1-2 tablespoons red wine vinegar
Mix all ingredients into a container
Freshly cooked chicken strips or beef.
Feta cheese sprinkled in.
Sour cream for topping.
Wrapped in a burrito. YUMMY!
